Rosé Wine Syrup

1 cup of castor sugar
2 cup of rosé wine
1 teaspoon of honey

Method

  1. Put a saucepan on a low heat and add the cup of sugar to the pan
  2. Gradually add the wine and turn the heat up so to bring the wine to the boil
  3. After it boils, constantly stir the syrup on a lower heat, allowing it to simmer
  4. As the syrup begins to thicken, add the honey and continue to stir the syrup until it develops a sticky consistency, all the sugar is dissolved and the syrup has a lovely rich pink colour
  5. Once you are happy with the syrup, turn off the heat and let the syrup cool a little.
  6. If you would like to add the syrup to fruit for your pavlova, put the fruit in a bowl and mix together with a few tablespoons of syrup. You can then keep the remaining syrup for another occasion.
